Veggie Summer Rolls Recipe

Summer rolls are great to enjoy as a snack. They also go great accompanied with a salad or main dish. Today over on my Youtube channel I’m showing you just how quick and easy they are to make once you have all of your ingredients prepped. Summer Roll Recipe Ingredients

Rice Paper Wraps
Bibb Lettuce
Shredded Romaine Lettuce
Shredded Carrots
Thinly Sliced Red Bell Pepper
French Green Beans (ends cut off)
(2) Fuji Apples (Julienne)
(1) large cucumber (Julienne)
1/4 cup cilantro

Miscellaneous Ingredients
1/2 cup Rice Vinegar
1/4 cup Coconut Nectar
Sea Salt
Toasted Sesame Oil
Ground Thai Chili Peppers
Rice Noodles (Pad Thai Noodles)
2 lemons
Asian hot pepper oil

Sweet and Spicy Ginger and Almond Butter Sauce
1/2 cup almond butter
1 habenero pepper(seedes removed and finely minced)
3 tbsp fresh minced ginger
2 tbsp fresh minced garlic
1/4 cup coconut nectar
1/2 cup fresh water
3 tbsp nama shoyu (unpasteurized soy sauce)
3 tbsp fresh squeezed lime juice
Blend all ingredients inside of a high speed blender and enjoy


Pickled Apple and Cucumber Mix Place julienne apple and cucumber into a bowl. Next mix all of the following ingredients together and add it to the bowl with the apple and cucumber mix: rice vinegar, coconut nectar, toasted sesame oil, ground Thai chili peppers. Let sit uncovered for approximately 30 minutes and then drain all of the liquid off. Squeezing out as much as the liquid as possible.

Rice Noodles
Prepare rice noodles according to package. Rinse in cool water and toss with the following ingredients 2 tbsp toasted sesame oil, 1 tsp Asian hot pepper oil, 1/4 cup cilantro, juice of 1 lemon and 1/2 tsp sea salt.

Assemble Summer Rolls

Fill large bowl with hot water from the sink and dip rice wrap into water quickly. Next lay rice paper down on surface covered with plastic and assemble your summer roll by adding in a small to medium size piece of bibb lettuce, shredded romaine lettuce, shredded carrots, 1 to 2 pieces of red bell pepper, rice noodle mix, 1 to 2 green beans, small amount of pickled apple and cucumber mix. Next take the rice paper and start to roll from the bottom and folding it over tightly. Tucking in the sides as you completely roll the wrapper to the end. Enjoy with Sweet and Spicy Ginger and Almond Butter dipping sauce.
