Today’s feature recipe is a Zucchini Noodle and Basil Pesto Sauce. This recipe is super quick and easy to make and loaded with flavor. It is also worth noting that this pasta recipe is gluten free and the perfect alternative to traditional pasta and super easy to digest since the noodles are made from fresh zucchini. RECIPE AND INGREDIENTS NEEDED
Zucchini Noodles
3-4 fresh zucchini peeled and spiralized (SEE VIDEO FOR HOW TO DO IT)
Hemp Seed and Basil Pesto Recipe
1 1/5 cups hulled hemp seeds
1 cup of fresh basil
8-10 cloves garlic
1/2 to 3/4 cup cold pressed olive oil
1 1/2 tsp sea salt
juice from 1 lemon
First add hemp seeds and garlic into the food processor and process until it is smooth but still has a chunky consistency. Add remaining ingredients and process until smooth.
This delicious pesto is raw and vegan and is the perfect dairy free alternative to your traditional pesto and it can be used interchangeably in many recipes. Once pesto is made spoon desired amount on top of zucchini noodles and enjoy!!!

Hemp seeds contain more protein than any plant food except soy and it is super easy to digest since it is free of enzyme inhibitors. Hemp seeds are also rich in omega-3 fatty acids.

I like to say that kale is king because it is loaded with a ton of vitamins and minerals that help rejuvenate the body. Kitchen Equipment Needed:Food Processor
King Kale Salad3-4 servings
2 bunches of curly kale (washed de-stemmed and torn into bite size pieces)
1.5 tsp sea salt
1/2 cup olive oil
1/2 tsp – 1 hot pepper finely minced
2 tsp fresh minced garlic
2 tbsp minced red onion
1/4 cup 1 red bell pepper finely chopped
1/4 cup fresh squeezed lemon juice
3 tbsp coconut nectar
TIME SAVING TIP: Mince fresh garlic and red onions in food processor until finely chopped.
Add kale, olive oil and salt to a bowl. Massage greens with your hand until they are wilted and the kale resembles a cooked texture. Add in remaining ingredients and mix well using a spoon!!! Salad is best once it has marinated for a few hours or overnight in the fridge. This salad will last 3 to 4 days in the fridge.
