Vegan Chickpea Tuna Recipe

Today’s feature recipe is a super quick and easy vegan lunch recipe that is healthy and loaded with tons of flavor. Cuisinart 11 Cup Food Processor

RECIPE INGREDIENTS

15 oz can organic Garbanzo Beans (low sodium/no salt added)

1/4 cup red onion

1/2 cup celery (about 2 stalks chopped)

1 tbsp kelp granules (seaweed)

3 tbsp avocado mayo (1 avocado and juice of half lemon processed in food processor until smooth)

1 tsp sea salt

1 tbs mustard powder

1/2 tsp black pepper

2 tbsp apple cider vinegar

First blend 1 avocado inside of food processor with the juice of half lemon. Next add in remaining ingredients and pulse until you reach a chunky consistency. Refridgerate for 1 hour and enjoy on toasted whole grain bread or on top of your favorite leafy greens.
