Today’s feature recipe is a Vegan BBQ Pulled Pork Sandwich and it is so yummy and easy to make. This recipe is a great and healthy alternative to take to a cookout or to enjoy during football season or to share with those who are non vegans.

KITCHEN EQUIPMENT USED: 
Cooking pan

RECIPE INGREDIENTS

2 cans of unripe jackfruit in can (in water or brine) NOTE: Do not purchase the one in syrup

1/4 cup red onion finely chopped

1 tbsp fresh finely minced garlic

1.5 tsp cumin

1.5 tsp smoked paprika

1/4 tsp cayenne pepper

1/2 tsp sea salt (eliminate if you are using jackfruit in brine)

1 cup low sodium vegetable broth

1/2 cup sweet bbq sauce

2 tbsp olive oil

Pre heat oven. Shred and prep jackfruit as seen inside of the video. Be sure to cut hard part away from each piece. Warm olive oil in pan and saute minced garlic and onions in pan until onions are soft and translucent. Next add in jackfruit and saute for 3-4 minutes. Next add in seasonings (cumin, smoked paprika, cayenne pepper and sea salt) and continue to saute and coat jackfruit with seasonings. Next add vegetable broth. Lower heat and simmer for 15 minutes. Next transfer jackfruit to baking sheet and cook in the oven at 400 degrees for 20 minutes. Next add bbq sauce and cook in the oven for an additional 15 minutes. Remove from oven and enjoy on your favorite gluten free or whole grain bun.  ENJOY!!!

Cuisinart 11 Cup Food Processor

RECIPE INGREDIENTS

2 bunches of Kale

1/4 cup red onion finely chopped

1/2 cup red bell pepper finely diced

2-3 jalapeno peppers finely minced

2 tbsp fresh finely minced garlic

1 ripe mango peeled and finely diced

1/4 – 1/2 cup hemp Seeds (OPTIONAL)

1/4 cup red wine vinegar

2tbsp coconut nectar

1 tsp sea salt (or to taste)

Prep kale by tearing it away from the stalk and then tearing it into small pieces. Next wash kale throuoghly. NOTE: you can use the recommended Cuisinart food processor above to chop/prep and mince the veggies for this salad (i.e red onion, red bell pepper, jalapeno pepper and garlic). Next all olive and salt to kale and massage the kale as seen inside of the video. Next add in remaining ingredients and mix well. Salad is best after marinating for 3-4 hours in the fridge. However, you can eat it right away. ENJOY!!!

15 oz can organic Garbanzo Beans (low sodium/no salt added)

1/4 cup red onion

1/2 cup celery (about 2 stalks chopped)

1 tbsp kelp granules (seaweed)

3 tbsp avocado mayo (1 avocado and juice of half lemon processed in food processor until smooth)

1 tsp sea salt

1 tbs mustard powder

1/2 tsp black pepper

2 tbsp apple cider vinegar

First blend 1 avocado inside of food processor with the juice of half lemon. Next add in remaining ingredients and pulse until you reach a chunky consistency. Refridgerate for 1 hour and enjoy on toasted whole grain bread or on top of your favorite leafy greens.

Fine Mesh Nut Milk Bag

RECIPE AND INGREDIENTS NEEDED

1 cup raw Brazil Nuts (soaked for 4 to 6 hours with fresh water)

32 ounces fresh coconut water (recommended brand – Harmless Harvest)

1 cup of fresh or frozen organic peaches

1 vanilla bean (beans removed from pod) or 1 tbsp of vanilla extract

3-4 medjool dates (NOTE: Remove the pits from the dates)

First blend Brazil nuts and coconut water together until nuts are completely pulverized (approximately 1 minute). Next pour blended mixture into the fine mesh nut milk bag to strain.

Lastly pour strained nut milk back into the blender with remaining ingredients. Blend until smooth and ENJOY!!!

RECIPE AND INGREDIENTS NEEDED

Zucchini Noodles 3 fresh zucchini peeled and spiralized (SEE VIDEO FOR HOW TO DO IT). Recommended spiralizer link is above

Fresh Marinara Sauce Recipe

2 ripe vine tomatoes
1 stalk celery

2 cloves minced garlic

1 habenero pepper (finely minced inside food processor)

3-4 medjool dates

1/2 cup sundried tomatoes

1/4 cup finely chopped red onion

Fresh herbs (basil and rosemary)

1 tbsp dried Italian Seasoning

2 tbsp olive oil

First add garlic and hot pepper into the food processor and process until finely minced. Next add remaining marinara sauce ingredients into the food processor and pulse until sauce is smooth but still has a chunky consistency.

This delicious marinara sauce is both raw, vegan and super fresh and healthy. Once the marinara sauce is made spoon desired amount on top of zucchini noodles and enjoy!!!
